When you’re taking care of a newborn, meals become less about planning and more about finding a few quiet minutes whenever you can. Some days lunch happens at noon. Other days it’s three o’clock. And sometimes you’re eating one-handed while a little milk-drunk milkworm (baby) naps on your shoulder.
This sandwich quickly became our everyday lunch during those first few months with our baby.
I’ve always loved cooking, but for some reason I could never make a sandwich that felt quite right. Thankfully, my mom was staying with us after our baby was born, and she showed us the art of sandwich making (she is a professional as she did work at the sandwich shop at Knott’s Berry farm a summer growing up). It’s simple, refreshing, filling, and comes together in just a few minutes.
The secret is layering two different kinds of turkey breast. We usually buy one thicker, more flavorful deli turkey and pair it with a thinner, more affordable variety. Together they make a sandwich that feels much heartier without costing much more.
And then there’s the apple.
It sounded a little unusual the first time I tried it, but the crisp sweetness balances the savory turkey and creamy avocado perfectly. Now I can’t imagine making this sandwich without it. We actually got that idea from a Modern Family episode!

Ingredients for 1 Sandwich
- 2 Tasty Thicker Turkey Breast Slices
- 2 Thin Turkey Breast Slices
- 1 Provolone Cheese Slice
- 1 Leaf of Romaine Lettuce
- 2 Tomato Slices
- ½ Avocado
- Mayo
- 2 Wheat Bread Slices
- 1 Apple
Instructions
- Optional: Toast the wheat bread slices until defrosted
- We have to do this step because we keep our bread in the freezer!
- Cut the lettuce, tomato, and avocado into sandwich appropriate slices
- Cut the apple into at least 2 thin slices similar thickness to cheese. Serve the rest on the side.
- Spread the mayo on the bread
- Assemble the sandwich!
